(Fall Inspired) Sweet & Tangy Roasted Cauliflower

Yesterday was a gloomy, sit-inside and watch movies kind of a day. Now that Halloween is just around the corner, there are SO many good scary movie recommendations on Netflix. Really…too many. I somehow got sucked into the endless time warp that is Netflix for the majority of the day and by late afternoon, realized that my food consumption consisted of mostly puppy chow (a.k.a my kryptonite). So, off to the gym I went! I knew I went a little overboard with the thrillers when I finally made it down to the gym in my apartment and startled myself, thinking that the water cooler was a person hiding in the corner. Needless to say, I switched to comedy for the remainder of the evening.

Lazy days=lazy foods. Luckily, I did my grocery shopping on Saturday BUT I literally felt like forgoing the cooking and just ordering Chinese food. Sounds great, right?

Of course I didn’t. I decided to give one of my favorite Asian cuisine alternatives a festive twist. And obviously, it gave me an excuse to use my spiralizer.

RECIPE RATING: EASY

Gather the ingredients…

-1 large sweet potato, spiralized

-1 large head of cauliflower, cleaned and cut into pieces

-4 to 5 cloves fresh garlic, chopped

-5 tbsp honey

-1 tbsp maple syrup

-1 ½ tbsp dark soy sauce

-6 tbsp water +2 tsp corn starch

-Salt and pepper

-Olive oil

Put it all together…

-Place cut cauliflower pieces onto a large baking sheet and toss together with salt, pepper and olive oil. Then, roast in the oven for approximately 45 minutes at 375°, or until golden brown. Set aside to cool.

-Before making the sauce, place the spiralized sweet potato in a skillet with olive oil and cook on medium heat until tender.

-In a separate skillet, heat garlic, soy sauce, honey and maple syrup until it starts to boil. Reduce heat.

-Dissolve corn starch with water in a separate bowl and then add it to the skillet with the sauce. Bring to ingredients to a boil until they start to thicken-stir frequently.

-Once the sauce is a thick texture, add in spiralized sweet potatoes and cauliflower. Toss until vegetables are evenly coated with sauce.

-Enjoy over rice, on a salad or as a side dish!
