Sweet Potato Chili

Gather the ingredients…
-1 yellow onion, chopped
-1 large sweet potato cut into 1/2" pieces
-3 garlic cloves, minced
-15 oz can of reduced sodium black beans, drained/rinsed
-6 oz can of tomato paste
-4 cups of vegetable broth
-2 to 3 tbsp of chili powder (dependent on preference)
-2 to 3 tbsp of cumin (dependent on preference)
-1 tbsp turmeric
-1 tbsp olive oil
-1 cup uncooked quinoa
-Salt and pepper to taste
Put it all together…
-In a large saucepan add olive oil, onion, garlic and cook on medium heat until golden brown
-Add turmeric, chili powder, cumin and tomato paste and cook for an additional 2-3 minutes
-In a large pot, add the above ingredients, as well as black beans, sweet potato pieces, vegetable broth and quinoa
-Cook on medium heat until it reaches a boil. Reduce heat to simmer until chili thickens
-Add additional seasoning to taste if needed. If chili is too dry, add more water
-Enjoy with cheese, avocado and tortilla chips!
