B-eat Your Greens Salad

This recipe is where it all started-my love for beets. Until about 2 years, I had never actually tried a beet, let alone beet greens. But this simple, yet delicious recipe is now my go-to when I’m looking for a healthy side. Although beets themselves are full of antioxidants (cancer fighters), the greens are really the healthiest part of the vegetable.
Because I cook this recipe at least 2-3 times a month, I was looking for way to change it up a bit. As I typically do on Wednesdays, I decided to casually window shop at TJMAXX. Of course I couldn’t leave there without buying something, so I finally gave in and bought myself a vegetable spiralizer. Once you go spiral, you don’t go back. If you have one of these bad boys, give this beautiful super food salad a try. If not, try out the beet greens recipe-your body will thank you!

BEET GREENS PART
Gather the ingredients…
-1 bunch of beet greens/tops or swiss chard
-2 TBSP dairy free butter (I prefer Smart Balance brand)
-2 TBSP olive oil
-1 TBSP garlic, minced
-1/2 small yellow onion, diced
-1/2 cup dry white wine
-1 TBSP fresh lemon juice
-Salt and pepper to taste
Put it all together….
-With a knife, separate the stems from leaves of swiss chard/beet tops
-Slice stems into 1-2 inch pieces
In a large saucepan, mix dairy free butter, olive oil, onion, garlic and stems
-Add white wine and simmer all ingredients until soft
-Add in chopped leaves and continue to simmer
-Add lemon juice, salt and pepper and cook everything together on low until all vegetables are soft


SUPER FOOD SALAD PART
Gather the ingredients…
-1 bag of fresh baby spinach
-Spiralized beets (raw)
-Beet greens (see recipe above)
-Caramelized walnuts
-Balsamic vinaigrette
-Optional: Feta cheese crumbles
Put it all together….
-In a small bowl, heat up raw spiralized beets for 1-2 minutes until softened. Then set aside to cool.
-In a large bowl add fresh spinach and top with cooled spiralized beets, beet greens, walnuts, cheese and dressing.
-Mix and serve!
*I made my own caramelized walnuts by mixing ½ cup of raw walnuts with 2 TBSP of brown sugar and 1 TBSP vegetable oil. After mixing these ingredients together I roasted them on a cookie sheet for 10-15 minutes at 315 °F until golden brown.
