When life gives you Rhode Island, make lemonade.

This past Sunday I spent a ‘spur of the moment day’ in Newport, Rhode Island. If you haven’t been there, it’s a must see. Even though I didn’t have enough time explore the town center, it looked absolutely adorable and had the “New England-y” look that I love so much. I’ve become a real beach bum lately and the weather was gorgeous, so obviously we set out in search of something to do near the water. Never having been to Rhode Island before I frantically Googled “things to do”. Although I had the beach on my mind, I wanted to experience Newport as much as possible in the shortest amount of time. Thank goodness for the Internet and unlimited data-there it was, the “Cliff Walk”. I was as happy as a New England clam! This picturesque 3.5 mile trail is one of the top attractions in Newport and stretches along the coast with views of crystal blue waters to one side and gigantic historic mansions to the other.


Parking wasn’t the easiest to find, seeing as everyone was out and about enjoying the sun. However, we found a free parking spot on a street within walking distance and spent a good hour and a half on the trail.

The views were breathtaking and the mansions were stunning. Along with breathing in the salty sea air, taking in the views and choosing which mansion I would buy if I were a millionaire, I got a bit crispy from the sun. The ‘oh so beautiful’ day turned into a hot one. Thank goodness that man selling ice-cold waters otherwise we might not have made it back to the car. My only regret from that wonderful Sunday is that I didn’t buy street-stand lemonade from a very smart kid who decided to set up shop near the trails. Did anyone else partake in summer lemonade stands when they were younger? My sister, neighbors and I always attempted but charged, what, maybe 10 cents a glass. I guess that’s the reason why I can’t afford one of those mansions.


As I sat at home yesterday on my day off I was missing the sun and craving lemonade. So I decided to make these tasty, lemony sweet treats. You would never know they have zucchini in them, I promise.
‘Squeeze the day’ Lemon Donuts (Dairy Free)

Gather the ingredients….
THE CAKE PART
-2 cups cake flour
-½ TSP salt
-2 TSP baking powder
-2 flax eggs (1 flax egg=1Tbsp ground flax meal + 3 Tbsp water…see below)
-½ cup vegetable oil
-1 cup sugar
-2 TBSP lemon juice
-Buttermilk alternative (a.k.a. ½ cup almond milk+ 2 Tbsp lemon juice….see below)
-Zest of 1 lemon
-1 cup grated zucchini, patted dry
THE ICING PART
-1 cup powdered sugar
-2 TBSP lemon juice
-1 TBSP almond milk
Put it all together…
-In a medium bowl mix flour, salt and baking powder and set to the side.
-Mix the flax meal and water together in a small bowl to make the flax eggs and set aside for at least 5 minutes.
-Mix 1/2 cup almond milk and 2 TBSP lemon juice in a small bowl and sit aside for at least 5 minutes.
- In a large bowl add oil, flax eggs and sugar until well blended.
-Then add lemon juice, buttermilk alternative, and lemon zest. Mix all ingredients together until blended.
-Fold in the zucchini.
-Add dry and mixtures together. Stir until completely blended.
–To make donuts, add mixture to greased donut pan (3/4 full for each donut mold) and bake at 350 °F for 20-25 minutes (or until golden brown). Watch carefully as donuts can overcook easily on the bottom.
-While still warm place cake and/or donuts on a drying rack, make glaze and spoon over until covered.
–Add lemon zest, sprinkles and/or lemon slices as garnish while icing is still wet if preferred.
**You can also make this into a pound cake. Just add mixture to a greased loaf pan and bake at 350 for 40-45 minutes (or until golden brown).
