I Could Talk Your Ear Off About Corn

Summer is finally here-warm days, less school traffic during my morning commute and last but not least, corn on the cob. Is there anything better than fresh corn on the cob? I mean, come on….summer BBQ’s would be NOTHING without this cob like friend.

Corn is so versatile and can be used in so many recipes-chili, salads, pizza, salsa etc. Although sweet corn (my favorite) is often high in sugars and carbohydrates, it’s also a good source of….

  • Fiber

  • Vitamin B6

  • Antioxidant Phytonutrients (good stuff)

So far this summer I’ve had two incredible corn experiences, which obviously must be shared.

1. Best Day Ever.

For those of you who don’t know, I work as an occupational therapist in a children’s hospital and am fortunate enough to only work four (long) days. On my Wednesday’s off, I frequently run errands, which typically includes a stop at a local grocery store. On this particular day I decided to make a pit stop at Whole Foods on my way to yoga. As I casually walked into the store with my mind set on going directly to the refrigerated food section, my stomach had other plans for me. Of course at the entrance of the store was a GIGANTIC pyramid of fresh corn with a sign that said “10 ears for $1”. A corn lovers dream! I immediately rushed over and grabbed a plastic bag, thinking to myself-is 20 ears of corn excessive for a person who lives alone? I decided to hold back and just get 10 ears. Anyone who likes corn can hopefully appreciate my excitement. It was a good day.

2. Just picked.

It was a rainy Saturday afternoon in New Jersey, so my boyfriend and I decided to go on a search for the sun and venture to New Paltz, NY for the day. We explored Minnewaska State Park, dined at a cute farm to table restaurant (The Village Tea Room) and last but not least stopped at a local farm market (Wallkill View Farm Market). We weren’t going to get anything at the market (because we didn’t want anything to spoil in the car) UNTIL we saw someone drag in an overflowing burlap sack of corn and a sign that read buy 12, get one free. At this point I was already interested, but my eavesdropping of a nearby conversation sealed the deal-“the corn was picked less than an hour ago”. Needless to say, we had a lot of corn to boil that night. But let me tell you….this was the best corn of my life. If you’re in New Paltz and see this place, YOU HAVE TO STOP. P.s. They were also selling homemade key lime pies. Next time, we’re bringing a cooler.

In conclusion, corn is healthy, summer is a great time to find cheap corn deals andddddd farm markets have AMAZING corn. I will always remember this summer as the great corn find of 2017.
