Beets & pizza-interesting, right? If you like beets, give this recipe a try! I wanted to share this recipe for a couple of reasons:
It’s easy! It just takes a little time to prepare the homemade dough
IT’S SO GOOD
It’s not greasy
Unfortunately for me, I’ve been blessed with my father’s wonderful genetics. One of the many digestive issues I face frequently is acid reflux after eating certain foods. Greasy foods and acidic foods (i.e. tomato sauce) are often triggers. The beet sauce is a healthy, unique and tasty tomato sauce alternative. So don’t worry, you can leave the Tums in the medicine cabinet for this one.
THE SAUCE PART
Gather the ingredients....
1 large beet, peeled and cut into chunks to reduce roast time
1 red onion, sliced
1 head garlic, unpeeled and whole
2 tsp salt
1 tsp olive oil
Putting it all together…
-Spread the olive oil over the beets, onion and garlic.
-Roast vegetables on a large baking sheet at 380 °F for approximately 40 minutes.
-When vegetables are roasted, peel the garlic and add all of the vegetables to the blender. Blend until the sauce reaches a smooth consistency.
THE DOUGH PART
Gather the ingredients….
-4 cups flour
-1 tsp salt
-1 tbsp sugar
-1 packet active dry yeast
-1 1/2 cups hot water (approximately 110 °F)
-2 tbsp olive oil
Put it all together…
-Combine all of the dry ingredients and mix thoroughly.
-Add the hot water to the dry ingredients and mix together until it reaches a doughy consistency.
-Add the oil and kneed until dough is smooth and can be stretched.
-Place the dough in an oiled bowl and cover it with a wet paper towel. Let it rise for approximately one hour.
-When an hour passes, kneed the dough and let it rest for an additional 15 minutes. Then split the dough into 2 equal parts.
-Roll the dough out to 1/8 inch thickness on a floured surface.
-Add toppings and bake at 380 °F for approximately 10-12 minutes (or until preferred bake).

TOPPINGS PART
-Beetza #1: Spread beetza sauce and top with roasted bell peppers (orange), fresh spinach, roasted red onion and feta cheese crumbles
-Beetza #2: Spread pesto sauce and add dollops of beetza sauce. Top with grape tomatoes, sweet corn, fresh spinach and feta cheese crumbles
**You can make this recipe gluten free by using a pre-made gluten free pizza dough mix, which can be found at many grocery stores
