BBQ Tofu Skewers

What is summer without a BBQ? Unfortunately for me, I’m not allowed to have a grill on my apartment balcony. BUT who needs a grill, when you can make a scrumptious BBQ meal with your oven and a few wooden skewers. Tofu

is one of my favorites these days for many reasons. It’s relatively inexpensive, contains lots of protein and is easy to cook. If you’re trying tofu for the first time, or don’t like the texture of tofu, this is the perfect recipe for you. Roasting tofu in the oven gives it a firmer, less wet taste. Give it a try-you won’t regret it!

Gather the ingredients…

-1 package EXTRA FIRM tofu

-1 medium red onion

-1 package grape tomatoes

-1 sweet red bell pepper

-1 large green zucchini

-Salt + Pepper to taste

-BBQ sauce of choice

-Large Ziploc bag

Putting it together…

-Open tofu, drain and pat dry with a towel/paper towel

-Slice tofu into long rectangles and place into a large Ziploc bag

-Add BBQ to Ziploc bag and cover tofu pieces completely

-Allow tofu to marinate in BBQ sauce for at least an hour

-Slice onion, pepper and zucchini into squares

-Remove tofu from Ziploc bag and cut into squares

-Arrange all ingredients on skewers and drizzle with olive oil

-Add salt and pepper

-Bake in the oven on 375 °F until evenly roasted (roughly 35-45 minutes)
