Summertime Sweet Potato Soup

RECIPE RATING: EASY

This is such a great soup recipe. It's light and delicious!

Gather the ingredients…

-2 medium sized sweet potatoes

-1 medium sized red onion

-1 medium sized red bell pepper

-3 cloves of garlic, chopped

-3 to 4 cups of vegetable broth (based on preference of consistency)

-1 tablespoon turmeric

-Salt and pepper to taste

Putting it all together…

-Cut bell peppers, sweet potato (leave the skin on) and red onion into slices and/or chunks

-Place the above vegetables on a large cookie sheet and lightly cover with olive and/or coconut oil

-Bake on 375 °F until roasted (roughly 45-60 minutes)

-Once roasted, add vegetables to a blender with vegetable broth, garlic and cumin and blend until smooth

-If needed, add extra broth for thinner consistency

***Leaving the skin on is a good way to add extra fiber to the recipe***
